These were a bit of an experiment. I wanted to make cookies but didn't have a lot of time and wanted them to be nutritious and delicious. I had too many bananas sitting around at home so started there and let the creativity flow. The result? Delicious, nutritious cookies!
The banana in these cookies provides a high nutrient energy boost, the oats are an anti-inflammatory source of fibre, and the almond butter adds a boost of protein and healthy fat to the mix. Add a little dark chocolate, vanilla, and cinnamon and you've got yourself a delicious snack or even breakfast. Who says you can't eat cookies for breakfast? Especially if they're as nutritious as these ones!
Banana Oat Chocolate Chip Cookie Recipe
Prep time: 10 minutes, Cook time: 20 minutes
Makes 12 cookies
2 ripe bananas
1 cup oats
1 tbsp almond butter
1/2 tsp cinnamon
1/2 tsp vanilla
1/4 cup dark chocolate chips
1. Mash bananas
2. Mix in oats, almond butter, cinnamon, and vanilla
3. Add chocolate chips to the batter
4. Scoop onto baking sheet and flatten
5. Bake at 350 C for 20 minutes or until edges are toasty brown
